Banana Peanut Butter Chocolate Chip Cake

Alright friends… I teased you with this cake in my IG stories the other day and I am still not over it. Hands down, this is the best dessert that has ever come out of our kitchen. To be fair, Lucy was really the one who did the baking and put in the effort, but it was my brain creation so we’re calling it equal. This combines three of my favorite things: banana, peanut butter, chocolate. For me, if you say anything has those ingredients, I’m sold. Lucy and I were craving a baked good and after having a ton of success with the carrot cake we made, I knew we could realy on our handy dandy baking mixes that we had in the pantry.

We grabbed the Simple Mills almond flour banana bread mix and immediately I had the idea of tossing in some additional ingredients. To ramp up the banana flavor (because, well, duh) we added an additional ripened banana and then also tossed in some peanut butter and chocolate chips. Because why the F not!? Thanks to using this cake mix, this “recipe” took no time to prepare and there was no room for error when it comes to my typical baking disasters. To make the cake mixture we followed the instructions on the box while adding in the banana and peanut butter to the wet ingredients and the chocolate chips once the batter was fully combined. Instead of using this mix for banana bread or muffins, we poured it into a cake pan and baked in the oven at 325 for around 30 minutes. This obviously depends on your oven, but take it out once you can stick a fork in the center and remove it without any batter on the prongs.

While the cake was baking, we decided to also ramp up the icing by mixing the Simple Mills vanilla frosting with more of the peanut butter. Again, because, why the F not. The more peanut butter the better, in my opinion. Once the cake is finished cooking and cooled for about 10 minutes or more, we slathered on the icing and dug in. I mean it, this cake lasted all of 5 seconds post icing pre consuming. Fortunately for us we only finished half of it and had more to feast on the next day. Guess what? Still as delicious! Cannot recommend enough.

Banana Peanut Butter Chocolate Chip Cake

My new favorite dessert recipe

Ingredients:

  • Banana (1)
  • Eggs (3)
  • Peanut butter (1/2 cup)
  • Chocolate chips (1/4 cup)
  • Water (1/2 cup)
  • Coconut oil (1/4 cup)
  • Simple Mills banana bread mix (1 box)
  • Simple Mills vanilla icing (3/4 cup)

Instructions:

  1. In a bowl, mash one banana
  2. Add the 3 eggs, ¼ cup of peanut butter, ½ cup of water, and ¼ cup of coconut oil into that bowl and whisk to combine
  3. Add in the Simple Mills banana bread mix and the chocolate chips
  4. Place the batter into a cake pan
  5. Place the cake in the oven at 325 and bake for around 30 minutes, or until it is fully cooked through
  6. While the cake is baking, add ½ cup of peanut butter and ¾ cups of simple mills vanilla icing into a bowl and whisk to combine
  7. Once the cake is cooked and cooled a bit, add the icing and enjoy!
