Banana & Peanut Butter Overnight Oats

Yet another easily transformable and prepable (I’m officially making that a word) breakfast. This takes legitimately under 5 minutes to make and continuously saves you so much time and money the next morning. Not only is this hands down the champion on my inexpensive / filling scale, but it is also perfectly served in a recently finished peanut butter jar. This will guarantee some stares from bystanders (confused why because in my mind eating PB out of a jar is a perfectly acceptable practice), but will allow you to easily bring breakfast somewhere and chuck the container without any hassle. I thank Elvis every damn day for this combination.



  • Oats (½ cup)- I prefer half steel cut and half rolled oats
  • Kefir (¼ cup) – if not using, double the skim milk
  • Skim milk (¼ cup)
  • Ripe banana (1)
  • Spoonful of peanut or almond butter (I prefer Trader Joe’s or Justin’s)
  • Spoonful of chia seeds
  •  Cinnamon
  • Water


1. Make your chia seed pudding:

  1. Place the spoonful of chia seeds in a cup and fill with enough water to double the height of the seeds
  2. Stir well so that the seeds and water are combined
  3.  Set aside for ~5 minutes

2. In a bowl, combine and mix the oats and cinnamon

3. In a separate bowl, mash ½ your ripe banana into a smooth consistency

4. Add the milk and peanut butter into the bowl with your mashed banana and mix together

5. Combine the bowls of dry and wet ingredients and mix well

6. Add in the chia seed pudding

7. Pour the mixture into a jar and top with a dollop of peanut butter and the remaining ½ of your banana

8. Allow the oats to soak overnight and enjoy the next morning or up to 4 days later.
